Hainan Chicken – my version

Although any proper Chinese chef would probably throw away his cleaver in despair, here is my version of the ever-popular Hainan chicken.  I decided to make this dish when I found an honest-to-goodness free-range chicken at the local supermarket (of all places) that had actually be marked down to sell.  Huzzah!
