Banana Cake with Lime Icing

As regular readers will know, I got some beautiful cake pans into stock before Christmas.  Well, I resisted temptation for as long as I could before finally succumbing today and abducting some from the shop for my very own.  My rationale is that I can hardly sell something if I can’t tell you everything about it. 

*crickets* 

Hmm.  Well, that’s my story and I’m sticking to it.  Here is the result…

Banana Cake with Lime Icing

Banana Cake 

 Cream 120 grams of butter and 3/4 cup of caster sugar until fluffy.  Mix in one medium egg and a generous slosh of vanilla essence.  Mash two VERY ripe bananas and add.  Sift in 1 1/2 cups of plain flour, 1 teaspoon of Bicarb and 1/4 cup of milk.  Mix gently and pour into greased pan.  Bake at 180C for 30-35 minutes or until a skewer comes out cleanly.

When the cake has cooled, turn out and trim base if nessessary so that it sits evenly.  In a small bowl, mix the juice of 1/2 a lime with a cup of icing sugar mix and add hot water in drops until you have a thick, smooth mix.  Dribble carefully over cake and top with grated lime zest.

NOTE:  Because of the detail of the silicone pan, I would advise that you spoon in a little mix to start with and then bounce the pan to ensure that all the air-bubbles are out before proceeding to pour in the remaining mix.

  • Wow, that looks amazing. I have to say that banana cake is one of my favourite cakes to eat and cook. I’ve never had it with lime icing but now i’m tempted to try it.

  • Thanks so much! I like the icing because it gives it a bit of a fresh perky flavour (and the white looks so good against the brown), but this recipe doesn’t really need it. It’s a very light, super moist recipe and very easy. Impossible to eat just one slice, I’m afraid.
